Jacques Torres Chocolate Chip Cookies
These are the best chocolate chip cookies ever. Shannon from The New School of Cooking got me hooked on these. She made them once during class and I knew right there and then that these would be my go-to chocolate recipe. Check out Crepes of Wrath for the recipe – they do an amazing job at showing you the entire process.
A little pointer, I made my cookies around 1.5 inches in diameter and baked them for 10 minutes. When I took them out they did not look fully cooked but you just have to trust me on this one, they are ready at the 10 minute mark. If you leave them out to cool the cookies will deflat and will be perfectly crunchy on the outside and chewy on the inside.
