Pumpkin & Apple Muffins
Delicious spiced pumpkin apple muffins to go with a hot cup of TEA or coffee.
Time: 45 minutes | Makes 1 dozen muffins
Ingredients:
2 cups of pumpkin puree
2 cups of diced red apples
4 tbsp of butter
1 1/4 cup of flour
1 tsp of baking powder
1 tsp of baking soda
1/2 cup of brown sugar
1/2 cup of granulated sugar
1 tsp of five spice powder
1/2 tsp of ground cardamom
1/4 tsp of ground cinnamon
1 tsp of vanilla extract
1 egg
Toppings:
1/2 cup of brown sugar
1/3 cup of flour
1/2 tsp of five spice powder
1/2 tsp of cardamom
1/4 tsp of cinnamon
3 tbsp of room temperature butter
Directions:
Preheat oven to 375 degrees.
In a small pot, combine butter and spices and brown butter on low heat – careful to not let it burn. Set aside. In a medium mixing bowl, combine flour, baking soda and baking powder. I used a mixture of whole wheat flour and all-purpose flour – you can also chose to use oat flour or just stick to using regular all-purpose flour. Set aside.
In a large mixing bowl, combine pumpkin puree, sugar, vanilla extract and butter spice mixture. Slowly combine flour mixture. Fold in Apples.
In a small bowl, combine all the ingredients for the toppings and mash together using a fork and knife. Scoop muffin mixture into lined muffin tins and top with brown sugar crumble. Put in oven for 20 minutes or until an inserted toothpick comes out clean.
