Pistachio Cupcakes

A couple weeks ago, DesignSponge posted a RECIPE by Ming from Ming’s Cupcakes and I’ve been wanting to try it out the recipe except I didn’t have much of a reason to make a dozen cupcakes until this week for my roommate’s birthday – luckily pistachios are his favorite. I skipped out on the fig compote filling since my roommate doesn’t have much of a sweet tooth and added 1 tsp of lemon zest to the cream cheese icing. I don’t make cupcakes often but I have eaten my fair share of cupcakes and I would highly recommend trying this one out. The cake is dense and spongie and would be perfect as a loaf with a simple lemon icing as well.
